Pasta Linguine

For the sauce

1 Coconut Milk Bio

1 Garlic 

1 red and 1 white onion

a bag of Baby Spinach 

1 Avocado

ready in 20 Minutes

Instructions

  1. Cook the pasta according to package directions.
  2. Fry the tomatoes in the olive oil and put them aside.
  3. Sauté garlic and onions in olive oil and add spinach and coconut milk. 
  4. Season the sauce and add pasta water. 
  5. Mix the sauce together with avocado in a blender.
  6. Serve pasta with green sauce and the fried tomatoes and parmesan on top.
